So on this salad I did not have my beloved camera man, so I have fewer pictures on the step by step procedure, plus I had to go cook at work in 30 minutes so was kinda rushed. Here it is though.
Mise en place
A pear
Blood orange or normal orange
Goat cheese
Lemons (2 is fine)
Lettuce
Dill
A little olive oil
Balsamic vinegar
Pistachios
I start by putting the balsamic in a saucepan to heat up and reduce till it is thick, what this does is concentrate the flavors and take out the vinegar taste. While this is reducing I shell the pistachios.
I also chop the lettuce, cut the pears and cut the blood orange into segmentsNow Here I am making the vinegrette with dill, lemon juice and then I whisk in some of that olive oil right there.
Crush the pistachios till nice and green and tiny, The balsamic vinegar is finished when it is nice and thick, in the lower right you see I transfered it into a small little cup for it to cool down.
Now All you have to do is add the chopped pears, oranges, crush some goat cheese, the homemade vinegrette, lettuce and dill to a big bowl and toss! And then transfer to plates and spoon some balsamic and extra pistachio's for garnish.
Enjoy the sweetness of the reduced balsamic with the crunch of the nuts and the tart of the oranges, and the earthy dill all in your palate.

It is so obvious that you can plate food. I would be so impressed if I was served a salad like this. My first visit and I will be back
Nice combination here too! I can perfectly imagine how it all work together. You're hired! ha!
