Minestrone: ahh the classic humble dish served as a main course soup. Protein veggies and flavor. This oldschool soup was a popular poor class soup because it wasn't expensive and could feed a lot of people. Its great because now it still does that, I cooked this up and fed the whole house I live in and everybody loved it.
Entered this in a One-Dish Dinners contest
Here it is:
Celery
Navy beans that I soak in water the nightbefore (about 1 1/4 cup of beans is what I used)
Onion
Parsley bunch
Sage
Spinach
Zucchini
Cabbage
Leeks
Garlic
Tomato sauce about 2 cups
Vegetable stock about 4 cups
Your favorite type of bread to spounge up the broth while consuming
Gather ingredients together
Start cooking the beans in water flavored with chopped garlic, a bunch of sage and olive oil
Chop up onions and celery
Sweat onions and celery along with a bunch of parsley that is just kind of ripped apart
Once onions are sweat add chopped zucchini and sliced leeks then follow with a grip of spinach
Now check on beans by taking one out and eating it, taste good and pleasent? Add them in
I then add the tomato sauce and let this simmer for a few minutes
Then add vegetable stock and let simmer for at least 30 minutes so the flavors can introduce themselves to each other and become friends=)
Meanwhile I roast some whole garlic in a bout 4 tablespoons olive oil until golden brown then I add this to the soup .
And spoon some soup in a bowl, tear off a peice of bread and enjoy

Minestrone really is a great soup with a lot of goodies in it. I like yours very much. I recently made mine with kale - wonderful too. Thank you for your entry!
